Before buying potatoes (or for that matter any other vegetable or fruit) make sure that they are not damaged in any way. A good potato should be smooth and shallow- eyed. People often believe that bigger is better, however this is not so with potatoes. Extra large potatoes often have hollow centers. Since you are going to be juicing them make sure that they do not have any green patches. These patches are caused by over exposure to sunlight and are bitter.
Make sure that you wash the potato thoroughly, using a stiff brush to remove any dirt. Although the skin contains many nutrients, I suggest that you peel your potatoes. Even after a thorough wash, there may still be dirt lodged in the skin itself. Potato juice has an unpleasant taste and is often considered to be tough to digest. You can add half a cup of beetroots or carrots to resolve these issues. If you feel bloated or uneasy after having the juice, you can dilute it with half a cup of warm water.
Potato juice is abundant in vitamins and minerals including vitamin C and potassium. Vitamin C is a great rejuvenator and protects you from rickets. Potassium helps to keep body tissues elastic and muscles supple.
